Broccoli and Stilton Soup

This has to be the best soup ever. Its so quick and easy to make and it tastes amazing. Its low in carbs and sugar and high in protein. Broccoli is a good source of fibre and protein, and contains iron, potassium, calcium, selenium and magnesium as well as the vitamins A, C, E, K and a good array of B vitamins including folic acid. For us diabetics broccoli is actually a super hero. It contains something called sulforaphane and studies have shown this compound could potentially reverse the damage to blood vessels around the heart caused by diabetes.

Serves 4

Ingredients

  • 2tbsp extra virgin olive oil
  • 1 onion chopped finely
  • 1 medium potato, peeled and diced
  • 1 leek, halved lengthways and cut into half moons
  • 1 celery stick, sliced
  • 1 knob of butter
  • 1 broccoli head, chopped. Separate the hard stalks from the soft buds and keep both
  • 1000ml chicken stock
  • 150g stilton

Method

  • Heat the olive oil in a large sauce pan on a medium heat
  • Add the onion and cook until soft
  • Add the butter, celery, leek and potato and stir together, cover with lid for 5 minutes
  • Pour in the stock and add broccoli stalks and cook for 15 minutes until the vegetables are soft
  • Add the rest of the broccoli and cook for 5 minutes
  • Turn the heat to low and using a hand blender, blend the soup until it is smooth
  • Crumble in the stilton and stir until it disappears.
  • Serve and enjoy
