This was one of the first meals I had when I first ever started to eat cleanly and it is still one of my favourites today. Don’t knock it until you’ve tried it, its delicious.

Ingredients
- 2 medium – sweet potatoes, peeled and cubed around 1.5cm
- 70g – chorizo halved down the middle and cut into half coins
- 1/4 cup – desiccated coconut
- 1 medium – red onion, peeled and cut into eighths
- 1 bunch – fresh coriander roughly chopped, stalks and all
- 400g – black beans, drained and rinsed
- 1 – red chilli, finely chopped
- 2 tbsp – olive oil
- 2 tbsp – full fat greek yoghurt to drizzle
Method
- Preheat oven to 180c
- Place sweet potato onto a lined baking tray and drizzle over the olive oil. Roast in the oven for 20 minutes
- Remove the tray from the oven and add the chorizo, coconut shavings and most of the red onion (leave a little for the end to garnish) and mix in well before putting back in the oven for around 15 minutes.
- When the potato is cooked and the onion has been stained from the chorizo remove the tray from the oven and mix in the black beans. The heat from the tray and it contents will warm the beans
- Cut the remaining onion very finely and mix it in a small bowl with the chilli and corriander
- Serve the sweet potato mix in bowls with a little salt, a drizzle of greek yoghurt and garnish with the chilli, onion and coriander
