Super Green Salad

This salad is a must for diabetics. It only contains around 5g of sugar per serving and just over 20g of carbs. Kale like broccoli is a superfood for diabetes. It is a good source of protein and fibre and will keep you fuller longer compared to other vegetables. Kale is also known to lower cholesterol. Hello spinach! Every health authority around the world hales this super dark green leafy non-starchy vegetable as a must for every diabetics diet whether they’re type 1 or type 2. Not forgetting avocados, these contain mostly monounsaturated fats which can improve insulin sensitivity. Avacados can even reduce the risk of heart disease and stroke in people with diabetes. So basically this salad is a natural no drug medication against diabetes. What you waiting for??

Serves 4

Ingredients

  • 2 tbsp – pumpkin seeds
  • 2 tbsp – sunflowers seeds
  • 2tbsp – sesame seeds
  • 2tbsp – tamari or soy sauce
  • 250g – broccoli florets
  • 85g – baby spinach
  • 60g – kale shredded thinly
  • 15g – fresh coriander roughly chopped, stalks and all
  • 2 – avocados, peeled and pitted and sliced
  • juice of 2 limes
Dressing
  • 3 tbsp – flaxseed oil
  • 2 tsp – runny honey
  • black pepper

Method

  • Place a frying pan onto a high heat. (no oil)
  • Add the pumpkin, sesame and sunflower seed to the pan and cover for around 4 minutes, shaking the pan every now and again until they are lightly toasted and begin to pop
  • Remove the pan from the heat and stir in the tamari/soy sauce
  • Half fill the base of a steamer with water and bring it to the boil. Put the broccoli in the top of your steamer, cover and steam for around 4 minutes or until tender
  • Transfer the broccoli to a salad bowl and add the kale, spinach and coriander
  • Place half the lime juice and avocados in a small bowl and toss well
  • Now to make the dressing. Put the remaining lime juice, the honey, the oil and some black pepper into a small jug and mix together with a folk
  • Sprinkle the seeds over the salad and serve immediately with some dressing
