Avacado Eggs

If you love avocados and you love eggs, these are perfect for you and your breakfast. Quick and easy to make and can be ready for you getting out of the shower.

Serves 1

Ingredients

  • 1 – ripe avocado, halved and pitted
  • 2 – small eggs
  • 2 tsp – fresh chives finely chopped
  • 1/4 cup – fresh parsley finely chopped
  • salt and black pepper
  • olive oil

Method

  • Slice a little bit off each half of the avacado so that it can lie securely on its side with the fleshy side up
  • Scoop enough of the avacado out with a teaspoon so that the egg can fit in
  • Brush the avacado flesh with a little olive oil
  • Crack each egg into the holes you made
  • Sprinkle with salt and pepper
  • Place onto a baking tray and bake near the top of the oven for around 15 minutes or until the whites of the egg are beginning to thicken.
  • Remove from the oven and sprinkle on some chives, parsley and a bit more black pepper
