Who doesn’t love banana bread? This recipe is one of my favourites, its so easy and tastes amazing. Most banana bread recipes use white flour but this is made with spelt wholemeal flour which doesn’t spike the blood sugar like white flour. Cut this baby into 12 portions and each slice is around 80 calories and only 12g of carbs.
Serves 12
Ingredients
- 1 – 1/2 scoops – chocolate protein powder
- 1/2 cup – spelt flour
- 1/2 cup – oats
- 1tsp – baking soda
- 1tsp – cinnamon
- 2 – mashed bananas
- 2 – egg whites
- 1tsp – vanilla extract
- 2tbsp – full fat greek yoghurt
- 1tbsp – dark chocolate chips
- 1tbsp – desiccated coconut
Method
- Preheat your oven to 175c
- Mix all the dry ingredients apart from the desiccated coconut in a medium mixing bowl
- Next add all the wet ingredients and the mashed banana and mix everything together well
- Line a bread tin with a grease proof insert
- Pour the mix into the tin and sprinkle the desiccated coconut gently over the top
- Place on the middle shelf of the oven for 35-40 minutes, test with a toothpick if the toothpick comes out dry its done
- Carefully remove it from the tin and let it cool down on a rack
